Green Chilli Margarita
We infuse our own green chilli liqueur with fresh jalapenos, then mix with El Rayo 100% Agave tequila, our house ‘lime’ acid and a touch of agave syrup and smoked salt to balance it all out.
Hay Cooler
We gently steep organic hay, meadowsweet and sweet woodruff in mineral water and add sugar and dry acidity to make a very bucolic cordial, then add Beefeater gin and mineral water
Champagne Daiquiri
This all starts out with our Champagne Acid – the same dry acidity profile as a certain French wine, but bumped to the level of a lime juice. We round that out with fruit sugar and some aromatics, add a good amount of Mount Gay rum and carbonate into our little cans.
Lychee Story
One of our favourite wines is a nice off-dry Riesling, so we made a cocktail about it – raw sugar and tartaric acid for the perfect balance, ultrasonically infused Thai basil Sapling vodka, lychee liqueurs and a light fizz.
